Mandy’s Homemade Chicken and Dumplings

Large pot of creamy Southern chicken and fluffy dumplings on a rustic kitchen table

There’s something about a pot of homemade chicken and dumplings that makes the whole house feel like autumn. This is one of Dexter’s favorite seasonal meals, and my easy version uses a rotisserie chicken and refrigerated biscuits for a comforting supper without spending all day in the kitchen.

Ingredients

  • Water — enough to fill approximately one-quarter of a large cooking pot (boiler)
  • Milk — enough to fill another quarter of the pot (so the pot is about half full of liquid)
  • Approximately ¼ teaspoon salt, adjusted to taste
  • Black pepper, to taste
  • 1 cooked rotisserie hen (chicken), meat removed from the bones and cut into small pieces
  • 3–4 cans of Pillsbury refrigerated biscuits or 2 cans of butter-flavored Pillsbury Grands biscuits

Instructions

  • Fill a large pot (boiler) about one-quarter full with water, then add milk to fill another quarter of the pot. The liquid should reach approximately halfway up the pot.
  • Add approximately ¼ teaspoon of salt, adjusting to taste, along with black pepper to taste.
  • Bring the water and milk mixture to a gentle boil, watching carefully so the milk does not boil over or scorch.
  • Remove all the meat from the cooked rotisserie chicken, discard the bones, and cut the meat into small pieces. Add the chicken to the boiling pot.
  • Open 3–4 cans of regular Pillsbury refrigerated biscuits, or 2 cans of butter-flavored Pillsbury Grands. Tear each biscuit into quarters and add the pieces to the pot.
  • Cook over medium heat for approximately 10 minutes, or until the dumplings are fully cooked and fluffy. Stir gently as needed to prevent sticking and keep the mixture from boiling over.
  • Check a dumpling in the center before serving. It should be cooked through, not wet or doughy. If needed, continue cooking until fully done.

Mandy’s Kitchen Note

The secret is not to undercook the biscuits! They should be light and fluffy all the way through. Keep an eye on the milk as it simmers, and allow extra time if the larger biscuit pieces need it.
